Description

Holsteiner Blut is a highly regarded variety of rhubarb known for its striking red stalks and exceptional flavor. The stalks are deep crimson in color, with a slightly less tart taste compared to other varieties, making them perfect for pies, jams, and sauces. This variety is prized for its high yield and vigorous growth, producing thick, tender stalks that maintain their color throughout the growing season. Holsteiner Blut thrives in cooler climates and is hardy in growing zones 3–8 as low as -40°C. It is a reliable perennial, returning year after year with minimal care, and is a favorite for home gardeners and culinary enthusiasts seeking both beauty and flavor in their rhubarb plants.

Care Instructions

Light: Plant in full sun for the best growth and highest yields, although it can tolerate partial shade. Aim for at least 6 hours of direct sunlight per day.

Soil: Rhubarb prefers rich, well-draining soil with a slightly acidic to neutral pH (5.5–7.0). Amend the soil with organic compost or manure to improve fertility.

Watering: Rhubarb requires regular watering, especially during dry spells. Keep the soil evenly moist but not waterlogged. Deep watering is recommended to encourage strong root development.

Fertilizing: Apply a balanced fertilizer or compost in early spring as new growth begins. Avoid excessive nitrogen, as this can result in more leaves than edible stalks. A mulch of organic matter around the base can also help improve soil fertility and moisture retention.

Pruning: Remove any flower stalks as soon as they appear to prevent the plant from diverting energy from producing edible stalks. In the fall, cut back the remaining stalks to ground level and add a layer of mulch for winter protection.

Mulching: Apply a thick layer of organic mulch, such as straw or leaf mulch, around the base of the plant to retain moisture, suppress weeds, and insulate the roots during winter.

Harvesting: Do not harvest any rhubarb in the first year to allow the plant to establish itself.

In the second year, you can harvest a few stalks, and in subsequent years, you can harvest more. Only remove 1/3 of the plant’s stalks at a time to avoid stressing the plant.

Harvest stalks when they are at least 10–12 inches long, but ensure the stalks are firm and vibrant red. Avoid picking the smaller, thinner stalks.

Winter Care: In cold climates, Holsteiner Blut rhubarb is winter-hardy, but it benefits from winter protection. Apply a layer of mulch to protect the roots and crowns from freezing temperatures.

Pest and Disease Management: Rhubarb is generally resistant to pests, but watch for aphids, slugs, and snails. Fungal diseases like crown rot can occur in poorly-drained soil, so ensure proper drainage and avoid overhead watering.
